Gluten Free Guanaja Cake

185 г Eggs
60 г Acacia honey
85 г Zahar
70 г Almond flour
95 г Animal cream 36%
60 г Brown rice flour
45 г Potato starch
6 г Backpulver
20 г Cocoa powder
80 г Melted butter
45 г GUANAJA 70% chocolate
Mix the eggs, honey and sugar without beating. Sift together the rice flour, starch and cocoa powder, then add to the mixture along with the almond flour and baking powder. Then add the cream. Finally add the 70% GUANAJA chocolate and melted butter. Pour the batter into the cake tins lined with baking paper, then use a buttered scraper to make a slit up the length of the cake to aid the baking process. Bake at 160°C for about an hour. Check that the cake is fully baked by inserting a knife into the centre. If it comes out clean, the cake is ready.
Serve the cake with a scoop of ice cream.
