Brule with Yuzu and Nectarini

Weight Ingredients
For the brûlée:
80 г Yuzu puree
125 г Sour cream
65 г Milk
120 г Yolks
50 г Zahar
50 г Brown sugar
For the nectarines:
2 pcs Nectarines
600 г Water
300 г Zahar
0,5 г Vanilla
0,5 г Cinnamon
0,5 г Lemon peel

 

Preparation:
 

For the brûlée:

Mix all ingredients in a bowl. Heat them to 60 ° C. Pour into a baking dish. Place in a preheated oven at 90 ° C. Bake for 50 minutes. Leave to cool at room temperature. Sprinkle with brown sugar and bake before serving.

For the nectarines:

Mix all ingredients except nectarines and bring to a boil. Halve the nectarines and remove the stone. Dip the nectarines in the syrup. Remove the peel, which will fall off easily after dipping in the warm syrup. Return the nectarines to the syrup and allow to cool. Cut into desired shape and garnish the brûlée.
