Amatica Vegan Pudding

Weight Ingredients
110 г Zahar
20 г Cocoa powder
20 г Maize starch
5 г Salt
400 г Oat milk
200 г Valrhona Vegan Amatica 46%
5 г Vanilla extract
Lightly sweetened whipped cream for serving or topping of choice.


In a saucepan, mix the sugar, cocoa powder, cornstarch and salt. Add and stir in the oat milk. Over medium to medium-high heat, stir the mixture constantly until it thickens and large bubbles begin to pop on the surface (5 to 7 minutes). Once it is bubbling, continue stirring for another 1 to 2 minutes before removing the pot from the heat. To the same mixture, add and stir in the chocolate and vanilla until the chocolate is melted. Transfer the pudding to 5 glasses filled halfway. Cover each with foil, making sure the foil touches the pudding to avoid hardening, and place it in the refrigerator to set, about 2 hours. Serve garnished with lightly sweetened whipped cream, fruit or topping of choice. The pudding can be stored in the refrigerator, tightly covered with plastic wrap, for up to 3 days.
