Salad with goat cheese

Weight Ingredients
50 г Red onion
20 ml Apple cider vinegar Ponti
2 pcs Orange
200 г Arugula
100 г Cooked beetroot
5 ml Rapeseed oil (for frying)
80 г El Pastor goat cheese
80 г Pomegranate
5 г Peppermint
5 г Dill
10 г Pumpkin seeds


Chop the onion and put it in a bowl and add the vinegar. Mix well. Peel the oranges as 2-3 pieces can be squeezed over the onions and vinegar. Place the arugula on a plate, top with the beets and orange pieces. In a frying pan, fry the goat's cheese for about 30 seconds or until it is golden in colour (use rapeseed oil for the fat). Add the pomegranate seeds to the onion dressing, vinegar and orange juice, then mix well and pour it evenly over the salad. Finally, add the grilled goat cheese wedges and sprinkle with pumpkin seeds, mint and dill.
