Technology:
It is produced only in the Emilia-Romagna region and is made from milk obtained from cows fed exclusively on hay and grass. There are different ripening levels and the milk is processed at 3am the day after it is produced. The cheese wheels are then left in brine for 21 days before being transferred for maturation of 12 and 30 months.
