Sabayon with Roasted Figs

Weight Ingredients (for 10 servings)
30 to 50 pcs. Figs
150 г Honey
50 г Lemon juice
Sabayon with honey and lemon
6 pcs. Egg yolk
70 г Zahar
25 г Water
50 г Lemon juice
25 г Honey
200 г Whipped cream 35%
3 sheets Silver leaf gelatin
Preparation:
Wash the figs and remove the stems. Bring the honey and lemon juice to the boil. Add the figs. Bake in the oven at 180°C for 15 to 20 minutes. Then cool.
Sabayon with honey and lemon.
Soak the gelatine in cold water.
Whip cream until peaks form and lightly curl. Combine remaining ingredients in a round-bottomed mixing bowl. Stir the mixture over a water bath (approximately 70°C) to a semi-cooked consistency. Add the gelatine. Whisk continuously until completely cooled. Fold in the whipped cream.
Presentation
Cut the figs in half. Place the whole fig half (3 figs per person) in the bottom of a jar. Pour a little of the cooking liquid over the figs. Top with sabayon. Finish with crushed biscuits.
