Hermitage is an association of dairy farmers from the Vosges region, North-Eastern France with a history dating back to 1931. What is special about Ermitage's cheeses is that they are all made gluten-free, and the production method, from warming the milk to curdling, draining, salting and ripening, follows the traditions of the region from nearly a century ago.
