Casserole with Chicken

Weight Ingredients 
1 p. l. Olive oil
half Onion (diced)
1 pc. Green or red pepper
2 cloves Garlic
1 p. l. Butter
450 ml. Chicken broth
350 ml. Salsa
425 г Black beans
150 г Maize
2 cups Shredded chicken meat for baking
1 cup Grated cheddar
Preparation:
Preheat the oven to 190°C and lightly butter an 11″x7″ baking dish.
Place a large skillet over medium-high heat and cook the onions and peppers in olive oil until softened (about 3-5 minutes). Add garlic and butter and cook until butter is melted.
Add water, Spanish rice and ½ cup salsa. Mix well and bring to a boil.
Reduce heat to low, cover and simmer, stirring occasionally, for 20 minutes or until rice is tender.
Add black beans and corn and mix well. Transfer to prepared casserole and spread rice mixture in an even layer in the dish.
Spread shredded chicken evenly on top of rice mixture. Top evenly with remaining 1 cup salsa and top with cheddar cheese.
Cover the dish with foil and transfer to a 190°C oven and bake for 10-15 minutes or until the cheese is melted.
Serve, top with sour cream, cilantro and corn chips, if desired.
